Culinary Tips & Tricks Featuring Kuebler Waldrip Haus Bed and Breakfast

Welcome to a new monthly column on the blog dedicated to all our foodie friends. We repeatedly hear about guests going gaga for all the magnificent meals our B&B’s make. So we thought it would be fun to get some insights from our innkeepers who have plenty of tantalizing tips and tricks that you won’t want to miss. Our first edition comes from Margy and Darrell Waldrip at Kuebler Waldrip Haus Bed and Breakfast in New Braunfels, TX.

TIP 1. HOW TO MAKE YOUR OWN BUTTERMILK: To make your own buttermilk, take 1/2 cup of regular milk or heavy cream. Add 1/2 tsp. of baking soda and stir into the milk. Let stand for 20 seconds to dissolve. Add some white vinegar and watch it bubble. Vinegar is a light acid and it reacts with the baking soda to form buttermilk. This is great for adding texture to breads, muffins, pancakes or waffles. See — I would have done better in school if I could have just related chemistry to FOOD! – Margy

TIP 2. HOW TO CUT A MANGO: We have many wonderful guests here at the Historic Kuebler Waldrip Haus B&B, and they teach us a trick from time to time. One morning, we had a guest that stayed who was the Head Chef of the Houston Country Club. We were having fresh mangos, but we did not know how to cut them. Margy said, “I bet you know how to cut a mango.” He took that mango and held it with the seed in the middle (and the seed is a flat seed). He then cut the mango on each side, and he placed the seed on a plate (he said it was for the chef to eat later – ha, ha). He then took each cut side and cut long ways and then turned it 90 degrees and cut it in a crisscross pattern. He took the cut mango and inverted it and placed it on a small plate. He then suggested to decorate it with other fruit such as blueberries or strawberries. Enjoy! Darrell
