Ingredients:

1/4 cup shredded Cheddar cheese
1/4 cup shredded Gruyere cheese
1 pound 90%-lean ground beef
1 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon freshly ground pepper

Directions:

1. Preheat grill to medium-high or preheat the broiler.

2. Combine Cheddar and Gruyere in a small bowl.

3. Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.

4. To grill: Lightly oil the grill rack (see Tip). Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they’ll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. Broil the stuffed patties in the upper third of the oven, about 4 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving.

Yield: 4 servings

Strawberry Croissant French Toast

Ingredients:

4 large croissants – day-old (stale)
3/4 cup milk
2 large eggs
1 teaspoon vanilla extract (use 2 tsp if you like)
2 tablespoons butter
Whipped cream — (optional topping)
Powdered sugar

Fresh Strawberry Syrup

1 quart fresh strawberries — sliced
1/2 cup sugar
1/4 cup orange juice
1 teaspoon orange rind — grated

Directions:

In a saucepan combine all of the strawberry syrup ingredients and let stand 30 minutes or until sugar dissolves. Cook over low heat, stirring occasionally, 5 minutes or until warm.

Slice croissants in half lengthwise. Whisk together milk, eggs, and vanilla. Pour into a shallow dish. Dip croissant halves into egg mixture, coating well.

Melt 1 tablespoon butter in a large nonstick skillet (or griddle) over medium heat. Add four croissant halves, and cook about 2 minutes on each side or until puffy and golden brown. Repeat procedure with remaining butter and croissant halves.

Serve the strawberry syrup over the french toast. Sprinkle with powdered sugar and top with whipped cream if desired.

Serving Ideas: Sprinkle a strawberries and blueberries on top for a colorful presentation.

NOTE: If croissants are not stale, they will not absorb the batter as fully, and will not plump as much when cooked.

The inspiration for the race was drawn from the Grand Prix de Paris horserace in Paris when Colonel Meriwether Lewis Clark attended in 1863.
