If you’re a peanut butter cookie lover, you can thank George Washington Carver for the idea. He included three recipes that called for crushed or chopped peanuts as an ingredient in a 1916 research bulletin entitled, How to Grow the Peanut and 105 Ways of Preparing it for Human Consumption. By the 1920s, peanut butter was being listed as an ingredient in the cookies.

Fast forward to Wednesday, June 12, when we commemorate National Peanut Butter Cookie Day! Whether you enjoy your cookies smooth and creamy or with a little crunch, put on your apron, preheat the oven and bake a batch to celebrate. Here’s a simple, but delicious, bed and breakfast recipe for Classic Peanut Butter Cookies from the Inn at Westwynd Farm located in Hummelstown, PA:

Classic Peanut Butter Cookies

Ingredients:

1/2 cup vegan margarine
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 teaspoon vanilla
1 cup flour
2 teaspoons baking soda

Directions:

Preheat oven to 375F.

Combine margarine and sugars until blended. Add vanilla and peanut butter until smooth.

In a separate bowl, mix dry ingredients, and then mix them into wet ingredients.
Roll into balls and place on cookie sheet. Make criss-cross marks on top of the cookies with a fork.

Bake for 10 minutes.
