St. Patrick’s Day blue? Yes, blue. It’s the color that was first associated with the Irish holiday. The tradition of wearing green actually came from the idea of placing a shamrock onto your clothing.

Along with deciding which green clothing you’re going to wear this Sunday, there’s also the matter of what you’re going to eat and drink. Corned beef and cabbage with pint of Guinness is a traditional and very popular choice. But, what about dessert? At the Hide Away Country Inn located in Bucyrus, OH, they’re incorporating a little Irish flair with their bed and breakfast recipe for Chocolate Guinness Cake that, when frosted on top, looks like a frothy head on a pint.

Chocolate Guinness Cake

Ingredients:

1 cup Guinness
10 tablespoons unsalted butter
1 1/2 cups superfine sugar
1/2 cups dark brown sugar
3/4 cup baking cocoa
2 eggs
2/3 cup sour cream
3 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking soda

Frosting:
8 ounces of cream cheese, softened
1-1/2 cups confectioners’ sugar
1/2 cup heavy whipping cream

Directions:

Grease a springform pan and line the bottom with parchment paper. In a small saucepan, heat beer and butter until butter is melted. Remove from the heat; and add cocoa and sugar until blended. Combine the eggs, sour cream and vanilla in another bowl and then whisk into beer mixture. Then put the flour and baking soda in a bowl and then whisk into beer mixture until smooth. Pour batter into prepared pan.

Bake at 350° for 45-50 minutes and cool on a wire rack.

In a large bowl, beat cream cheese until fluffy. Add confectioners’ sugar and cream; beat until smooth. Spread the icing on the top of cake so that it resembles a pint of Guinness.
