Did you make a New Year’s resolution to start eating healthy? Are you looking for some nutritious options? If you haven’t added oatmeal to your 2013 food list yet, let January be the start because it’s National Oatmeal Month. It’s a complex carbohydrate that’s loaded with fiber and has been known to help lower cholesterol and the risk of heart disease.

Oatmeal’s versatility is also an important benefit. Not only can you enjoy a warm bowl of the rolled oats in the morning topped with bananas, apples and walnuts, but also baked in cookies and mixed into smoothies. Here’s a hearty and filling bed and breakfast recipe for Baked Apple Oatmeal courtesy of The Victorian Rose Bed and Breakfast located in Mount Joy, PA, and Gillian’s Famous Oatmeal Cookies from the Craftsman Inn, Calistoga, CA:

Doris Baked Apple Oatmeal

1/2 cup oil
2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup milk
1 and 1/2 cup rolled oats
1 and 1/2 cup quick oats
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons baking powder
2 cups chopped apples (or other fruit as desired)

Stir all ingredients together and add 2 cups chopped apples (or any other fruit to you liking). Bake at 350 F for 50 minutes in a greased 2 quart dish.

1 cup All Purpose Flour
½ tsp. Mixed spice
½ tsp. baking powder
¼ tsp. salt
1 cup unsalted butter (2 sticks ) at room temperature
1 cup brown sugar
1 egg, beaten
1 tsp. vanilla
3 cups oats
1 cup chopped walnut pieces
1 cup chocolate chips
½ cup dried cherries

Preheat oven to 350 deg. F. In a medium bowl, sift flour, mixed spice, baking powder and salt.

In a freestanding mixer, with a whisk attachment, mix butter and sugar until softened. Add beaten egg and vanilla essence. Mix. Add flour mixture and mix on low speed until combined. Add remaining ingredients and mix until just combined.

On a large baking sheet lined with parchment paper, drop tablespoons of dough, spacing them well. Cook for 16 minutes. Cool.
