Did you know it takes about 540 peanuts to make just one 12-ounce jar of peanut butter? Whether you enjoy it creamy or crunchy, peanut butter is tasty treat when paired with apples, bananas and celery or enjoyed all by itself. It’s also packed with protein making it a nutritious treat to be enjoyed this month which has been deemed Peanut Butter Lover’s Month.

Another way to savor the spread is to use it as an ingredient in baked goodies. There are many delicious bed and breakfast recipes you can try that include peanut butter including Easy Peasy Peanut Butter Cookies

1 roll (18oz) Pillsbury refrigerated peanut butter cookies
1/2 cup white chocolate chips
1 cup peanut butter
1/2 cup semi-sweet chocolate chips
1/2 cup chopped salted peanuts

Heat oven to 350 degrees. Grease 24 mini muffin cups with cooking spray. Cut cookie dough into 24 slices. Press each slice into bottom and up side of each mini muffin cup, forming 1/4 inch rim above top of cup. Bake 10-15 minutes and cool for 5 minutes. Then press dough down in center of each cup to make room for 2Tbs. filling.

Meanwhile, in 2-quart saucepan, melt white chips and 1/2 cup peanut butter over low heat, stirring constantly. Divide mixture evenly into cookie cups (about 1Tbs. each). Refrigerate for 10 minutes.

In same 2-quart saucepan, melt chocolate chips and remaining 1/2 cup peanut butter over low heat, stirring constantly. Divide chocolate mixture evenly on top of peanut butter mixture in each cup (about 1Tbs.each). Sprinkle chopped peanuts over top of each. Refrigerate until set, about 1 hour.

1 cup real peanut butter (chunky or smooth)
1 cup white sugar
1 egg
1 tsp baking powder

Mix all ingredients together in bowl. Drop onto baking sheet by the tablespoonful. Leave more room between dough if using chunky peanut butter, it spreads out more. Press fork tines into top of dough to slightly flatten dough. Bake at 350 degrees F for 10-12 minutes.

For a change, do not press fork tines into top of cookie dough, instead, after baking, push an unwrapped Hershey Kiss into each hot cookie.
