Looking for something quick and flavorful to stir up your long weekend? Then you’ll want to whip up some Fiery Chipotle Beans.

This recipe from the Andon-Reid Inn Bed and Breakfast, in Waynesville, North Carolina, is sweet and spicy with an unexpected kick. The cider vinegar adds a tang that’ll keep you coming back for more.

chipotle beans

Ingredients:

6 ounces chorizo, sliced thin
2 ½ cups chopped onion
1 cup chicken broth
1/3 cup brown sugar
1/3 cup cider vinegar
1/3 cup chili sauce
1/3 cup molasses
2 teaspoons of each; dry mustard and Chipolte chile powder
¼ teaspoon of each; salt, ground cloves, cinnamon and allspice
1 (15-oz) can of each; black, pinto & Great Northern beans, rinsed & drained

Directions:

  • Preheat oven to 325 degrees
  • Heat Dutch oven over medium high heat
  • Add chorizo
  • Sauté for 2 minutes
  • Add onions and sauté for 5 minutes
  • Stir in chicken broth and remaining ingredients
  • Bake uncovered at 325 degrees for 1 hour

Serve your Fiery Chipotle Beans on their own or toss in some chips for a real fiesta!

The Magnolia Inn is back in business!

About a year ago, an electrical fire all but destroyed the historic, Chester, South Carolina, bed and breakfast.

Flames swallowed the roof of the 5,000-square-foot Colonial Revival-style home and destroyed the entire second floor. The water used to put out the fire completely ruined the first floor and all the furniture that the innkeepers, Mike and Marsha Eland, had spent more than 30 years collecting.

The Eland’s initially purchased the home in 2006 and spent a year restoring it, turning it into a bed and breakfast. Then last February, disaster struck, causing about $300,000 in damage. In the days after the loss, the Elands grief turned into a steely resolve. They decided to rebuild and add to the history of the inn, which is listed on the National Register of Historic Places.

“We decided we were done talking about the fire,” said Mike Eland.

Restoring the building for a second time was anything but easy. The inn’s historic significance meant that the architectural details of the original structure had to be recreated as closely as possible. Reconstructing the inn relied heavily on memories and photographs. It was “somewhat like trying to bake a cake using a picture, but no recipe,” said Mike.

Despite the loss, both sentimental and financial, the Elands were able to see the silver lining. The changes made during restoration allowed the couple to enhance guests’ experience by incorporating more modern amenities. Guests still enjoy antique solid-wood furniture, luxury linens, and the inn’s private label soaps and lotions but now also have access to wireless Internet and LCD televisions in their rooms. Each of the four guest rooms now feature queen size beds, private baths and all-season fireplaces.

Construction was completed mid-2010. Come Christmas, the inn was fully decorated and ready to welcome its first guests. “We hope to see some familiar faces return to the inn soon,” said Mike.

The Magnolia Inn is now accepting reservations.

It seems everything has gone high-tech these days… even Valentine’s Day cookies! As if e-cards and electronic love letters weren’t enough, now cookies are talking in SMS too!

Might as well rise to the occasion. The Barn Inn Bed and Breakfast in Millersburg, Ohio, has some Sour Cream Cookies that are big on taste and low on text count.

Here’s the recipe. Make sure to keep the glossary at arm’s length!

Ingredients:

  • 1 C. Sour Cream
  • 2 C. sugar
  • 1 C. butter, softened
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 5 1/2 C. flour

The process:

Cream together sour cream, sugar and butter. Add eggs and vanilla. In a separate bowl mix together the baking powder, soda, and flour then add the dry ingredients to the creamed mixture. Chill for two hours or overnight. To roll out, use plenty of flour on counter. Roll to 1/4″ thick or slightly thicker. Cut out shapes and place on ungreased cookie sheet. Bake at 350 for approximately 12 minutes until done. Test by touching the center of the cookie. If it leaves an indentation, they are not quite done. Remove from oven before edges brown.

These are best if they are baked just until done and iced with your favorite icing. This batch is iced these with melted Wilton white candy melts, which is white chocolate then tinted with a little bit of rose food coloring.
