Chocolate-Covered Cherry Cake [rate this recipe]
Ingredients: Who can resist the taste of Chocolate and Cherries – they are combined in this wonderfully moist cake that is easy to make in less than 10 minutes. 1 – 18.25 ounce box devil’s food cake mix, with or without pudding 1 – 21 ounce can cherry pie filling 2 eggs 1 teaspoon almond extract
Directions: Preheat oven to 350 degrees (or 325 if using a dark pan). Grease a 12-cup tube pan. Combine all of the ingredients in a large mixing bowl. Beat on low to moisten, for about 1 minute; then on medium, beat for an additional 2 minutes, scraping the sides with a rubber spatula. Pour into prepared pan and bake for about 45 minutes or until top springs back when lightly touched. Cool in pan for 10 minutes, then invert onto a cooling rack to finish cooling. To serve drizzle with versatile chocolate sauce flavored with 1 Tablespoon pure almond extract added to recipe. Versatile Chocolate Sauce: 6 ounces semi-sweet chocolate chips ½ cup heavy whipping cream 2 tablespoons light corn syrup In a medium saucepan, over medium heat, combine morsels, whipping cream and corn syrup. Stir constantly until morsels are melted and sauce is smooth. Remove from heat. This recipe will make enough sauce to drizzle over 8-10 slices of cake. Double recipe if you want a heavier sauce coating on your dessert.
