Aberdeen's Baked Pancakes & Sausage [rate this recipe]
Ingredients: Brown n Serve Sausage (pork or turkey, suggest maple flavored) Pancake Mix (buttermilk or regular) Pecans (if desired) Caramel Sauce Butter & Maple Syrup (Select pan based on number of guests - servings 3"x3". Then determine amount of ingredients based on loosely covering pan bottom with sausage and filling pan about 1/3 full with batter. Pecans and caramel sauce to taste.)
Directions: Brown link sausages to cover appropriately bottom of desired pan. Drain fat well.(Pre-cooked sausages recommended, esp. maple flavored.) Arrange sausage in bottom of pan loosely with spacing. Mix pancake mix and pour over sausages to no more than about 1/3 of the depth of the pan (it WILL rise). Bake 350 degrees - time 45 minutes (cooking time may vary with oven) Test with toothpick to make sure it is baked sufficiently (toothpick should come out dry). Poke holes in the raised pancake top. Caramel sauce – drizzle over as desired. Pecan pieces - sprinkle on top. Put back in oven for a few minutes to warm sauce. Cut into 3"x3" slices and serve with butter and maple syrup on the side.
