Pumpkin Roll [rate this recipe]
Ingredients:

Cake ingredients:
3 eggs
1 cup sugar
½ can pureed pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
½ tsp salt
½ cup chopped nuts, can use walnuts or pecans
Powdered sugar

Filling:
1 cup powdered sugar
8 ounces cream cheese
4 tbs soft butter or margarine
½ tsp vanilla
Directions:

Grease and flour a jelly roll pan. Heat oven to 375 degrees F.

Beat 3 eggs and 1 cup sugar at high speed for 5 minutes. Stir in ½ can pumpkin and lemon juice. Add the 3/4 cup flour, 1 tsp baking powder,1 tsp cinnamon, 1 tsp ginger, ½ tsp nutmeg, ½ tsp salt and mix thoroughly.

Evenly spread chopped nuts in bottom of prepared jelly roll pan, and then spread cake mixture on top of nuts and bake for 15 minutes. Watch cake carefully, as you don’t want the edges to burn.

When cake is cooked immediately turn out onto a terry cloth dish towel that has been sprinkled with powdered sugar and roll the long way. Let cool completely.

Beat in mixer all filling ingredients until well combined & smooth:
1 cup powdered sugar, 8 ounces cream cheese, 4 tbs soft butter or margarine, ½ tsp vanilla.

When cake has cooled, carefully remove cake from towel and gently spread with filling. Sprinkle with more powdered sugar before serving.
