Christmas Morning Scones [rate this recipe]

Ingredients:

2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon ground cardamom
6 tablespoons butter
¼ cup chopped candied red cherries
¼ cup chopped candied green cherries
¼ cup golden raisins
1 egg
½ cup buttermilk
Glaze:
1/2 cup confectioner’s sugar
1 tablespoon plus one teaspoon fresh orange juice

Directions:

Preheat oven to 400 degrees. In a large bowl combine flour, sugar, baking powder, salt and cardamom. Using a pastry blender, cut in butter until it resembles coarse crumbs. Add candied cherries and raisins, egg, and buttermilk and mix well. Turn dough onto lightly floured surface and knead dough by gently folding and pressing the dough for 10 to 12 strokes or until dough is smooth. Pat or lightly roll dough into a 7-inch circle about 3/4ths inch thick. Cut into 8 wedges.

Place wedges 1 inch apart on an ungreased baking sheet and bake at 400 degrees for 20 minutes or until bottoms are golden brown. Meanwhile mix confectioner’s sugar and orange juice into a glaze. Cool scones slightly. Spread or drizzle glaze over scones and serve warm. Makes 8 servings.


Recipe Origin: If you are like me, you purchase ingredients for Christmas baking of fruitcake, and then never find the time to make the fruitcake! I created this recipe to try to use up the candied cherries left over from overzealous planned Christmas baking projects. This is an easy scone recipe that has the look and taste of the holidays. Cardamom is an essential ingredient in our family’s traditional Christmas cooking, and it adds so much to this scone recipe. The colors of red, green, and golden remind us of Christmas, and help use up our impulse buying for the holidays.
