Caroline’s Baked Blueberry French Toast [rate this recipe]

1 loaf French bread cut diagonally into 1 inch slices
8 eggs
2 cups whole milk
1 & 1/2 cups half & half
3 Tbsp. sugar
2 tsp. vanilla
½ tsp. ground cinnamon
Dash salt
1 cup fresh blueberries

Praline Topping
2- ¼ lb sticks butter
1 cup packed light brown sugar
1 cup chopped pecans
2 Tbsp. light corn syrup


Arrange sliced French bread in a generously buttered 9 by 13 pan.

Combine eggs, milk, half & half, sugar, vanilla, cinnamon, salt and whisk until well blended. Pour over bread slices. Cover and refrigerate overnight.

Next day, preheat oven to 350. Make praline topping (see below) and spread evenly over bread. Sprinkle with 1 cup fresh blueberries. Bake uncovered for 45 minutes until puffed and lightly golden in color.

Praline Topping: Combine all ingredients in a medium saucepan, heat over moderate flame until bubbly, stirring frequently.
