Ingredients: This recipe is featured in the new Best Places to Kiss Cookbook. Lemon-Caper Sauce (Can be made ahead; see recipe below) 2 Milton’s Healthy Multigrain English-style muffins (split & toasted lightly) 6 cups fresh baby spinach 2 tablespoons olive oil + 1 tablespoon sweet cream unsalted butter ¼ teaspoon garlic 12 oz. Nova Scotia-style salmon lox 4 eggs—poached until firm.
Directions: Melt butter with olive oil and garlic in large sauté pan. Sauté spinach over medium heat until slightly wilted and warm. Set aside. Poach eggs until nicely firm (we use a cake tester to test the centers and it works wonderfully). Place ½ toasted muffin on center of plate. Top with sautéed spinach. Flake-fold several pieces of salmon lox on top of spinach. Gently slide poached egg on top of lox. Ladle generously with Lemon-Caper sauce. Plate with several spears of fresh steamed asparagus and fresh sliced tomato. Lemon-Caper Sauce 2 cups vegetable broth 3 tablespoons cornstarch 1 ½ cups reduced-fat sour cream 3 tablespoons lemon juice 4 tablespoons drained capers Salt & pepper Whisk broth & cornstarch together in 3-quart saucepan until smooth. Stir over medium-high heat until boiling (2 to 3 minutes). Whisk in sour cream, lemon juice & capers. Stir frequently until heated thru 2 to 3 minutes. Season to taste with salt & pepper.
