Triple Duty Peaches & Cream [rate this recipe]
Ingredients:

4 C. fresh peeled sliced peaches (do this first- I like to cut them in chunks rather than sliced)
3/4 C. raw sugar or brown sugar (use any kind you wish but I like these the best)
3 Tbs. cornstarch
1/4 tsp. salt
1/2 C. water (use a little less if your peaches are very ripe and juicy)
1 Tbs. lemon juice
2 Tbs. butter

For Cake

3/4 C. sugar
1/2 C. butter or margarine
1 tsp. baking powder
1/2 tsp. baking soda
2 eggs
1 tsp. vanilla
1/2 tsp. almond flavoring (optional:I put this in because my husband loves anything with almond flavoring in it - it is very faint)
3/4 C. buttermilk

Optional Ingredients:
Powdered Sugar to sprinkle
Vanilla Ice Cream
Buttermilk Pancakes
Belgian Waffle
Whipped Cream

Note: If you just want to make the coffee cake and not have left over peach sauce, cut sauce ingredients in half.
Directions:

In sauce pan, combine sugar, salt, cornstarch, water, peeled and chopped (in large chunks) peaches, and lemon juice.

Cook over medium heat until thick and peaches are partially cooked. (Just wing it. Really ripe fruit will cook a little faster and require less water.)

Remove from heat and set aside. Add butter and stir until melted.

For cake:

Preheat oven to 350 degrees. Spray a 8 or 9 inch square baking pan with non stick spray. (I like glass).

Blend butter or margarine with sugar. When fluffy, add eggs and beat until well combined.

Add flavorings.

Add buttermilk alternately with flour, baking powder, and baking soda. (I don't sift any of these. I just mix them all up in a bowl then add it to the other ingredients.)

Pour about 2/3 of cake filling in the bottom of the pan. Spread no more than 2 cups of the peach sauce over the cake. Top with remaining cake filling - drop by spoonfuls.

Bake at 350 degrees for 45 minutes or until golden brown on top.

Remove from oven and let cool. When cool or room temperature, sprinkle with powdered sugar just before serving and/or top with a dollop of whipped cream or ice cream. We use real whipped cream.

Use remaining peach sauce over Buttermilk Pancakes or Belgian Waffles. Here we make them from scratch. Top with whipped cream if desired. Alternately pour warm sauce over vanilla ice cream and top with whipped cream for a peaches and ice cream sundae.
