Sweetheart Eggs [rate this recipe]

12 Large eggs room temperature
1/2 Cup Finely chopped scallions, green part and a little of the white
Cup Extra virgin olive oil
2/3 Cup Minced fresh Italian parsley
Cup Finely chopped sweet red bell pepper
1 1/2 Cups Baby arugula
12 Thin slices prosciutto
6 Slices toasted cheese bread
Salt and freshly ground black pepper to taste
Smoked paprika

Combine finely chopped scallions & peppers, olive oil, minced parsley and salt & pepper in a small bowl, whisk to blend and let stand at room temperature at least 15 minutes. (May be prepared the day before and refrigerated)

Lightly toast cheese bread. Place 1 slice cheese toast on serving plate. Use a pastry brush to slather about 1 Tbs green onion & pepper oil over toast. Set aside.

Put about 1 tablespoon of green onion & pepper oil into each of the individual ramekins. Spread the oil over the entire inside of each ramekin with pastry brush. Carefully break open two eggs into each ramekin, keeping yolks in tact. Sprinkle with salt, pepper and paprika.

Fill a large skillet, or two medium skillets, with water to a depth of about an inch and bring water to a boil. Add ramekins and adjust the water by adding or removing some until it reaches about halfway up sides of ramekins. Reduce heat to medium-low. Cover skillet and cook eggs until whites are set and yolks are desired consistency, about 7-8 minutes once water comes back to a simmer.

While eggs are cooking, arrange about 1/4 cup arugula on top of toast and top with 2 slices of prosciutto.

Use a rigid spatula and hand towel to remove ramekins from skillet when done and loosen edges of eggs with rubber spatula. Flip ramekin over onto prepared cheese toast. Enjoy!
