Eggs Dijonnais [rate this recipe]

Serves: 4

10 eggs, hard boiled, peeled, cut in rough chunks
1/2 cup (or more) mayonnaise
2 tbsp. Dijon Mustard or to taste
2 tsp. Maple Syrup or to taste
White pepper to taste
Fresh spinach leaves
8 thin slices of ham
4 English muffins, split and lightly toasted
1 cup shredded cheddar cheese

Pree heat oven to 400 degrees

In a medium bowl, gently mix together the eggs, mayonnaise, mustard, maple syrup and white pepper. Adjust the mustard, maple syrup and pepper to taste, if necessary. Place some spinach leaves and a slice of ham on each muffin half. Pile on about 1/3 cup of the egg mixture. Sprikle with cheese.

Bake on ungreased baking sheet for about 10 minutes, or until heated through.
