Orange Frosted Cranberry Cookies [rate this recipe]
Ingredients: Cookies: 1 c sugar 1/2 c packed brown sugar 1 c butter, softened 1 t grated orange peel 2 T orange juice 1 egg 2-1/2 c flour 1/2 t baking soda 1/2 t salt 2 c coarsley chopped fresh or frozen cranberries 1/2 c chopped nuts, optional Orange Frosting: 1-1/2 c powdered sugar 1/2 t grated orange peel 2 to 3 T orange juice
Directions: Directions: 1) Heat oven to 375 degrees. Spray cookie sheet with cooking spray or use parchment paper. 2) In large bowl, beat sugars, butter, orange peel, orange juice and egg with electric mixer on medium speed. Stir in flour, baking soda and salt. Stir in cranberries and nuts. Drop dough by rounded tablespoons about 2 inches apart on cookie sheet. 3) Bake 12 to 14 minutes or until edges and bottoms of cookies are light golden brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. 4) In small bowl, stir all frosting ingredients until smooth and spreadable. Frost cookies. About 4 dozen cookies.
