Carmel Pecan-Apple French Toast [rate this recipe]
Ingredients: 24 Slices, Crushed Wheat Bread, Tops and Bottoms cut off ½ Cup Butter 5 Tablespoons Corn Syrup 1½ Cups Brown Sugar 3 Cups Milk 2 Teaspoons Vanilla Extract 12 Eggs 2 Green apples, peeled, cored and sliced 1/8 inch thick ½ Cups chopped pecans For the Sauce: ½ Cups plain or vanilla yogurt ½ Cups Sour Cream
Directions: 1. In a saucepan on low heat, melt butter. Add corn syrup and brown sugar and bring to a simmer, stirring until sugar is completely melted and sauce is smooth. 2. Pour sauce into pyrex(s) to cover bottom of each pan. 3. Sprinkle chopped pecans over the caramel sauce. 4. Place one layer of prepared bread in the Pyrex 5. Put apple slices on top of first layer of bread, add 2nd layer of bread, making a sandwich. 6. In mixer or KitchenAid, beat the eggs well and add vanilla and milk, stirring until mixed. 7. Pour egg mixture over the bread, cover with foil and refrigerate overnight. 8. Bake at 375 for about 1 hour 9. To serve, portion French toast and with a spatula, lift each 2 layer piece from the Pyrex and flip over on the plate so the caramel side is facing up. Drizzle with sour cream sauce and top with fresh fruit to garnish. Serves 12 Pyrex: One 9x13 and one 8x8 for 12 servings Note: DO NOT USE PAN SPRAY ON PYREX FOR THIS RECIPE!
