Strawberry Rhubarb Muffins [rate this recipe]
Ingredients:

Yield Approx. 24

Place ingredients in a large mixing bowl in the following order:

4 Eggs
1 Cup Fresh Diced Strawberries
1 Cup Fresh Diced Rhubarb
6 Cups All Purpose Flour
2 Cups Sugar
2 Tbsp. Baking Powder
2-3 Cups Milk (variable)
1 Cup Oil
Directions:

Mix until the flour is incorporated and batter is the texture of a thick pudding. Scoop into sprayed muffin pans and bake at 350 degrees for approximately 20 to 25 minutes until a toothpick inserted into muffin comes out clean.

STREUSEL TOPPING

Blend lb. Butter (softened) with 1-cup sugar until creamed. Add 1 tablespoon lemon juice, 1 tablespoon orange extract, 1 tablespoon vanilla extract and flour until mixture is powdery in texture. Top on muffins prior to baking.
