Cranberry French Toast [rate this recipe]
Ingredients:

12 ounce bag Fresh or frozen Cranberries, fresh
1 cup Sugar
1 cupOrange Juice
1 teaspoon ground cinnamon
½ cup Sseet marmalade
1¼ cup packed brown sugar
8 Tablespoons butter
4 Tablespoons Light Corn Syrup
1 pound bread - Locally we used "French" bread"
12 thick slices, 1-inch slices with 3 slices/serving or 1 1/2 "sandwiches"
8 ounces, room temperature cream cheese
4 large eggs
1½ cup half and half
¼ cup orange juice
Vanilla 1 teaspoon
Directions:

1. Place cranberries, sugar, orange juice and cinnamon in medium saucepan and bring to a boil. Reduce heat and simmer until cranberries start to pop. Remove from heat and add ½ cup sweet orange marmalade.

2. Place brown sugar, butter, and corn syrup in medium saucepan over low heat. Stir to blend until butter is melted. Remove from heat and add 1¼ cup cranberry mixture. Stir and set aside. Mix and set aside. Remainder of cranberry mix will be reserved and used for garnish; reheat just before serving French Toast.

3. Grease a 9" x 13" baking dish.

4. Slice bread and spread cream cheese on one slice, covering with another piece of bread (like a sandwich). You can also slide loaf horizontally, cover one half with cream cheese THEN cut into pieces about 1 1/2 inches square.
We use “French bread” baked by the local grocery; dense, artesian or ethnic breads are also good in this recipe. Don’t use white bread.

5. Beat together eggs and add half and half, orange juice and vanilla.

6. Spread the cranberry/brown sugar mixture in baking dish. Layer cream cheese sandwiches on top.

7. Pour egg mixture over the bread. Be sure that all of the sandwiches have been moistened with the egg mixture.

8. Bake in a 350 degree oven. Bake with aluminum foil over the baking dish for 30 minutes, then remove foil and bake for 25 minutes or until bread is nicely browned.

9. A few minutes before the baking is complete, place cranberry sauce on stove top and warm.

Serve with remaining cranberry sauce and your favorite bacon or sausage.
